Roasted Chick peas

I am a huge fan of chickpeas in salads and stuff but they can also be a really great snack :)

You can roast them in the oven with just about any seasonings you want and thy get golden brown and crispy and are the perfect snack that's good for you and packed with protien.

Like I said, you can mix and match seasonings and try out new combinations.

My recipe is as follows:

Can of chick peas drained and patted dry with a paper towel.
Put them in a bowl along with:
2 tbs of extra virin olive oil
1 tsp smoked paprika
1 tsp cracked black pepper
1 tsp kosher salt
(salt and pepper doesnt have to be exact, I just throw it on there)
and I also put just the smallest pinch of cayenne (only if you want a little heat)

Roast in a 425 degree oven for about 25-30 minutes or until golden brown and crispy.
If you try one they shouldnt be soft anymore they should have a crunch to them!

let cool completely before storing or they will get soft again from the heat.

Roasted Pumpkin Seeds

Roasted Pumpkin Seeds
 Clean out seeds out of pumpkin, rinse, and pat dry with a paper towel.

Place on baking sheet on a single layer. Lightly coat with olive oil, then add salt and pepper. Mix all together with your hands so each seed is coated.

Bake at 350 for 20-30 minutes or until desired golden brown.
Let cool completely before storing them.

(You can also add different flavors to the seeds using the same recipe. Such as cinnamon, sugar, garlic, or any other add ins that you would like!)

Makes the perfect healthy snack!

Caprese Salad

My mom made me a delicious Caprese salad for lunch today.

She layered sliced tomatoes and fresh mozzarella and topped with with salt, pepper, olive oil, and balsamic vinegar drizzle. Delish!

Peanut Butter Granola Bites

Today I made these easy, 5 minute peanut butter granola bites, and they turned out amazing.
They are healthy, yummy, and a perfect snack for on the go. 
 Try for yourself :)

Peanut Butter Granola Bites
 1 & 3/4 C old fashion oats 
1 C granola (I used a organic honey version from Wegmans) 
1/2 C pumpkin seeds (or any seeds of your choice)
1/4 C dried cranberries
1/3 C honey
1/3 C creamy peanut butter (melted)

Combine all dry ingredients. Add honey. Melt peanut butter, then add that. combine until wet. Then form into bite-sized balls.
(If it seems to dry, you can add more pb or honey)
Refrigerate to firm up and enjoy!
