Zucchini appetizer

This was such a great appetizer.
We got the idea from our good friends at Federico's Pizza in Shrewsbury, NJ.

You grill zucchini on the grill (plain with nothing on it).
You also grill sliced bread that has olive oi,l salt, pepper, and garlic powder on it.
Slice up some fresh mozzarella.

To put it all together you put slices of zuchinni down first, then mozzarella on top and drizzle that with olive oil salt, pepper, and drizzle of balsamic vinegar. And you have the grilled garlic bread on the side. It is so easy, and so delicious!

Blackberry Peach and Feta Salad

This was a really yummy salad combo my mom came up with.
It was an arugula salad with blackberries, sliced white peaches, and crumbled feta.
It was delicious. I put a lemon vinaigrette on it, which was a simple vinaigrette of olive oil, lemon, salt and pepper. So good.

Hawaiian Grilled Chicken

 I was looking for something to make my grilled chicken a little livelier and I stumbled across this Hawaiian Chicken recipe on pinterest and it looked really good. It was just a marinade without extra sauce so it wasn't too fattening and it turned out really good. Mine wasnt the exact recipe because I didnt have coconut milk so I used regular milk with a splash of coconut extract. I'm sure it would of been better with the coconut milk but mine was very good and still got the coconutty flavor!

Ingredients:
3 pounds of boneless skinless chicken breasts pounded thin
2 cups soy sauce  (See Note; the soy sauce and water just needs to be a 1:1 ratio)
2 cups water
1 1/2 cups brown sugar
1 bunch of green onions, chopped (reserve some for garnish)
1/4 cup of a white onion, chopped
1/2 teaspoon minced garlic
1 teaspoon of sesame oil
1 (13.5 ounce) can of coconut milk (I didnt have coconut water so I used milk and a splash of coconut extract)
*If this recipe is too big you can always half the measurements if you aren't making as much chicken
 
Mix all ingredients in a bowl and put pounded chicken breasts in it. Let sit for as long as you can. The longer you let it sit in the marinade the more flavor it will have. It needs to sit for atleast an hour.
Then take it out of the marinade and put it on the grill and cook! Delish and so easy! :)

Roasted Broccoli



Cut Broccoli into small pieces. and put on a baking sheet with olive oil, salt and pepper. Mix around and coat the oil on the broccoli. Slice garlic into thin slices (about 3-4 cloves and sprinkle the thin slices around the broccoli. Roast in the oven for 10 minutes then add cashews into the pan. Roast for another 10-15 minutes or until soft and a little crispy on the flowerettes.

As soon as you remove the broccoli from the oven. Squeeze the juice of a lemon all over the broccoli and before serving add a sprinkle of Parmesan cheese.

Painted Bucket

My boyfriends aunt Blaise asked me to do it for her bird seed bucket. Added a little color to a plain bucket and it looks adorable in the garden!
