Lemon Artichoke Chicken


This is one of my favorite meals. Its called Lemon Artichoke chicken.
Its super easy to make and it tastes great! Enjoy

What You'll Need:
6 boneless chicken breasts (pounded thin)
1/4 cup of all-purpose flour
4 tablespoons of extra-virgin olive oil
1 teaspoon of black pepper
1/4 cup of butter (1/2 stick)
2 cups of chicken broth
1/4 cup of white wine
1/4 cup of fresh squeezed lemon juice
2 14oz. cans of artichoke hearts, drained, rinsed, and quartered lengthwise
1 teaspoon of salt
1/4 cup of capers (I used a little more because I love them!)
Chopped parsley for garnish

What To Do:
In a shallow dish or plate combine 1/4 cup of flour and salt and pepper.
Dredge chicken breasts in mixture.
In a large skillet, put EVOO. Add chicken to pan and cook, turning until lightly golden brown on each side. Take chicken out and put it on a platter in a 200 degree oven to keep warm.
Add chicken stock and wine to pan, stirring to scrape bits off bottom.
Bring mixture to a boil and cook until reduced by half, about 6 minutes.
In a small bowl, knead together remaining two tablespoons of flour and 1/4 cup of butter. Whisk into sause and stir until thickened. Stir in lemon juice and artichoke hearts.
Pour sauce over the chicken and just before serving add parsley and capers to the top.
Serve over linguini or by itself

I also served this with brussel sprouts becuase they are my favorite!
Roasted in a 400 degree oven with salt, pepper, and olive oil until golden brown!
