cranberry walnut biscotti



So I have been really in the mood for biscotti. But the biscotti you get at the store is so rock hard I hate it.
So I found a recipe that has the same taste and little to no calories of biscotti but is a little on the softer side. it has a crunch, but not break your teeth hard!

What you'll need:
2 cups of all purpose flour
1/2 cup of granulated sugar
1/4 cup of brown sugar
1 tsp of baking soda
1/4 tsp of salt
3 eggs
1 tbs of vanilla extract
2 tablespoons of butter
1 tbs of vegetable oil
1 cup of crasins (dried cranberries)
3/4 cup of chopped walnuts

What to do:
Preheat oven to 350 degrees
Mix flour, baking soda, salt, and sugar in a bowl
In a small bowl mix, eggs, vanilla, butter, and oil.
Add wet ingredients to dry and mix until combined and dough like texture
Fold in walnuts and cranberries

Spray baking sheet
Shape dough into a log like figure, similar to a long rectangle (like below)
Bake at 350 for 25-30 minutes.
Take out and let cool for 10 minutes.
Then, cut biscotti into 1 inch strips and place back on baking sheet
Bake for 10 minutes, flip side, and bake another 10.
Take out to cool completely.. ENJOY!
